Olive oil roast plums with honey, thyme and ricotta
We've had a seasonal glut of delicious sweet plums from Tablehurst Farm the last couple of weeks. Try baking them in honey with fragrant thyme in this easy to make dessert though and you will be sure to impress!
Ingredients
4-6 ripe Tablehurst plums, halved and stoned
1 tbsp raw organic honey
1 tbsp of fresh thyme leaves plus a few more to sprinkle as garnish
Knob of butter
1 tbsp Olive oil
High Weald Dairy Sheep’s Ricotta
Heat the oven to 200C.
Heat a skillet or sauteuse and add a knob of butter and the olive oil. When hot and bubbling place the plums flesh side down and fry for a few minutes until turning golden.
Remove the pan from the heat, drizzle with honey, scatter the thyme leaves and place on the top shelf of the oven.
Bake in the oven for 15-20 mins or until the plums are soft, a little browned and bubbling in the juices.
Serve in a bowl with a spoon of ricotta and with fresh thyme leaves sprinkled on top.
