Sautéed French Beans with Tomato and Basil
We're currently enjoying a seasonal glut of delicious and crunchy french beans and with tomatoes ripening it's time for this Mediterranean inspired dish full of summer flavours and fragrant basil to top it off.
Ingredients
1-2 tbsp olive oil
1 medium onion, 3 shallots or a bunch of spring onions, chopped
2 cloves garlic chopped finely
300g French beans, topped and cut in to 1" pieces
300g ripe tomatoes, chopped
200ml white wine
Large bunch of basil leaves roughly torn
Salt and pepper
In a skillet or large frying pan heat the oil over a medium heat and softly fry the onions for 5-6 minutes until soft but not yet golden. Add the garlic and beans and continue fry, stirring regularly for a few more minutes. Stir in the tomatoes and wine, season with salt and pepper and allow to simmer covered loosely with a lid for 8-10 minutes until the sauce has reduced and thickened slightly. Throw in the basil before serving and stir through. Check for seasoning and serve with a fresh summer salad and warm fresh bread.
